Quick and Easy Garlic Roasted Chicken

This quick and easy roasted garlic chicken is great for those days when you are pressed for time and looking for a delicious 30 minute dinner. Being in the process of moving this has been the majority of our days lately. I will definitely be happy once we finally get moved and I can get back into my kitchen.



Ingredients:

  • 2 tbsp extra virgin olive oil

  • 2 boneless chicken breasts

  • Salt

  • Pepper

  • Oregano

  • Red Pepper

  • Garlic Powder

  • Rosemary

  • Juice of ½ a lemon

  • 1 head of garlic

  • 2 tbsp white wine vinegar

  • 1 tbsp milk

  • 3 tbsp water

  • 2 slices of sourdough bread, grilled or toasted


Directions:


Preheat the oven to 425 degrees F. Heat the olive oil in a large ovenproof skillet over medium-high heat.


Season the chicken with salt, pepper, oregano, red pepper and rosemary.



Cook chicken until browned, about 5 minutes per side.



Separate the head of garlic into cloves but do not peel. Add the garlic to the skillet and transfer to the oven. Roast until the chicken is cooked through but still moist, about 15 to 20 minutes.



Once the chicken is cooked, remove from the oven. Take the garlic cloves and squeeze them out of their skin onto a plate and mash with a fork.



Place the bread on a platter and spread the mashed garlic on the bread.



Top each slice of bread and garlic with a chicken breast.



Return the skillet to the stove, add the vinegar to the skillet and scrape up any brown bits with a wooden spoon. Slowly whisk in 3 tablespoons of water and 1 tbsp of milk and simmer until the sauce thickens slightly.



Pour the sauce over the chicken and bread.


Serve with a fresh vegetable to complete the dish. I decided to serve this with a side of simply roasted yellow squash.
